Продемонстрирована возможность применения флуоресцентной спектроскопии для получения информации о физико-химических свойствах и качестве термически обработанного молока посредством одновременного определения содержания фурозина и лактулозы. Сравнение полученных результатов с результатами стандартных методов показало высокую корелляцию между ними.
