Investigation of fatty acid composition, thermal and rheological behavior of yak, cow and horse fats

Camilya SMANALİYEVA | Cıldızay ÖZBEKOVA | Asılbek KULMIRZAYEV

The objective of this paper was to study the fatty acid composition, and thermal and rheological behavior of Kyrgyz yak (Bos grunniens) visceral fats compared to visceral fats of cow (Bos taurus) and horse (Equus caballus). The result of the studу revealed that the content of saturated fatty acids (SFA) in yak fat was higher than those of unsaturated fatty acids (UFA) (about 58.3 and 38.0 %, respectively). The UFA content in yak fat was higher compared to cow fat (about 27.1 %) and lower than that of horse fat (about 60.0 %). The melting temperatures determined using DSC were found to be 55.18 ...More

Magnetic nanoparticles preparation by chemical reduction for biomedical applications

Ruslan ADİL AKAY TEGİN

This work presents Fe3O4 and AgFe nanoparticles with an average diameter of 25 and 15 nm synthesized by chemical reduction of corresponding salts under a mild condition. Cubic crystal structure and spherical shape of the nanoparticles were studied by X-ray diffraction, Field emission SEM and energy-dispersive spectroscopy analysis. For biomedical applications, the nanoparticles were tested against bacteria E.coli and results revealed AgFe nanoparticles

Fluorescence spectroscopy for accurate and rapid prediction of meat composition

Cıldızay ÖZBEKOVA | Asılbek KULMIRZAYEV

The potential of fluorescence spectroscopy was assessed to study cow, goat, sheep and yak meat. Meat samples were taken from muscles, viz. Gluteus medius (GM), Longissimus dorsi (LD) and Semitendinosus (ST). The moisture, fat and protein content of meat samples were measured. The emission fluorescence spectra of tryptophan (305-500 nm), riboflavin (410-700 nm) and vitamin A (340-540) were recorded directly on meat samples at 290, 382 and 322 nm, respectively. Principal component analysis (PCA), partial least squares regression (PLSR) and partial least squares discriminant analysis (PLSDA) were ...More

Determination of physicochemical parameters, phenolic content, and antioxidant capacity of wild cherry plum (Prunus divaricata Ledeb.) from the walnut-fruit forests of Kyrgyzstan

Camilya SMANALİYEVA | Canıl İSKAKOVA | Cıldız ÖSKÖNBAEVA

Wild fruits and berries from the walnut-fruit forests of Kyrgyzstan may hold nutritional and health benefits for humans. Since information on their nutritional value is scarce, physical properties and nutritional value of naturally occurring red, black, and yellow cherry plum fruits (Prunus divaricata Ledeb.) were evaluated. The wild cherry plums featured moisture contents between 81.07 and 85.87%, reducing sugar contents of 6.83-8.42%, alimentary fiber of 0.78-1.38%, ash contents of 0.48-0.74%, acidity levels of 0.97-2.31%, and ascorbic acid concentrations of 16.00-30.25 mg/100 g. The total p ...More

Study of moisture content and water activity of rice using fluorescence spectroscopy and multivariate analysis

Cıldızay ÖZBEKOVA | Asılbek KULMIRZAYEV

The potential of fluorescence spectroscopy for non-destructive and rapid measurement of moisture content (MC) and water activity (a(W)) of rice was examined. A total of n 15 samples of rice produced at different locations were studied. The emission fluorescence spectra of tryptophan (305-600 nm, excitation: 290 nm) and emission fluorescence spectra of riboflavin (410-700 nm, excitation: 370 nm) were collected from milled rice. MC and a(W) of the rice samples were measured. Spectral data were subjected to principal component analysis (PCA) and partial least squares discriminant analysis (PLSDA) ...More

Composition, nitrogen fraction, and amino acid profile of mare's milk produced in the mountains and highlands

Ayçürök MACİTOVA | Asılbek KULMIRZAYEV

The study was carried out to determine the effect of 2 ecological regions and lactation period on chemical (P < 0.01) and amino acid (P < 0.01) composition and nitrogen fraction (P < 0.01) of mares grazing on pastures at 1700 m (vegetation is dominated by shrubs and sub-shrubs) and 2200 m (vegetation is dominated by grasses, forbs, sub-shrubs) above sea level. The animals were kept under extensive pasture conditions and received no additional feed supplements. Milk samples were collected monthly from May to July and from May to August from mares grazing at 1700 m (Mountains) and 2200 m (Highla ...More
