Применение процедуры предколоночной дериватизации с диэтилэтоксиметиленмалонатом в определении содержания аминокислот молока, методом обращенно-фазовой хроматографии с диодно матричным детектированием было исследовано. Установлено влияние рН среды на коэффициент отклика. Оптимизированы условия модификации аминокислот образцов при проведении процедуры пробоподготовки. Было достигнуто полное разделение 18 аминокислот. В молоке коровы преобладала глутаминовая кислота, концентрация которой была в два раза больше чем лейцин и лизин, и в три раза больше чем аспарагиновая кислота.- The application o ...Более

Физико-химическое исследование фазовых равновесий в системе Y(HCOO)3-NH(CONH2)2-H2O при 25°С

Изотермическим методом исследована растворимость и природа твердых фаз в си- стеме Y(HCOO)3-NH(CONH2)2-H2O при 25°С. В системе установлен концентрационный интервал кристаллизации нового инконгруэнтно растворимого соединения Y(HCOO)3-NH(CONH2)2 с мольным соотношением, равным 1:1. Индивидуальность нового соединения Y(HCOO)3-NH(CONH2)2 подтверждена методами: химического, рентгенофазо- вого, дифференциального термического анализа и ИК- спектроскопического анализа. Comparison of Rheological and Colorimetric Measurements to Determine α-amylase Activity for Malt Used for the Beverage Bozo

In the current study, rheological and colorimetric methods were compared for determination of α-amylase activity of grain malt, used for Kyrgyz traditional fermented beverage Bozo. The highest α-amylase activity determined by colorimetric method was found in barley malt (32.83 A), followed by wheat (32.09 A), and was lowest in millet malt (10.82 A) and maize malt (10.76 A). Rheological parameters of millet porridge without and with malt were studied.
